Dried Fruit and Oats Parfait
2 cups (160g) UNCLE TOBYS Traditional Oats
1 tablespoon sunflower seeds
2 tablespoons pumpkin seeds
¼ cup (60g) coarsely chopped natural almonds
1 tablespoon olive oil
1 tablespoon maple syrup
¼ cup unsweetened apple juice
1 cup dried fruit medley
400g low fat dairy yoghurt
Preheat oven to 180°C/160°C fan-forced. Grease and line baking dish.
Place UNCLE TOBYS Traditional Oats, sunflower seeds, pumpkin seeds, natural almonds, olive oil, maple syrup and apple juice in a medium bowl and stir to combine. Spread over a baking tray and bake in oven for 15-20 minutes until lightly browned and dried out, stirring occasionally. Cool slightly, stir in dried fruit medley.
Spoon some of the oat mixture evenly among four large serving glasses. Top yoghurt. Continue layering with remaining oat mixture and yoghurt. Serve topped with fresh fruit.
